Sweet Potato Banana Bites

I am egg intolerant and am not eating any at this time. I have read the comments and seen where the consistency of this dish is not cake like or such, so in your opinion, do you think flax eggs would work? I read where the eggs act as a binder only; so I was thinking that this may work.
This sounds delish and I am looking for breakfast options since I am also off all wheat and dairy as well. Can you recommend a food processor? I have a kitchenaid 13 cup food processor, which is what I use for any of my recipes involving shredding, pureeing dates and cashews and anything else. This took a lot longer than 10 minutes to fully bake for me. It was closer to 30 minutes. I also used sweet potatoes out of the fridge and transferred everything to an oven save dish so that may have been the cause of the delay.
I think transferring it from the hot skillet impacts the baking time. This is so good, I never used coconut milk before. Yum, will be making again! I can see how easily I will be able to adjust the basic recipe based upon the ingredients I may have on hand and still have a great end breakfast! Thanks for sharing—-and not having exact measurements! Do you think canned pumpkins would work instead of sweet potato?
If so, how much canned pumpkin if you had to guess? At 10 minutes mine still looked raw and not set. It has been in for closer to 20 now and still not loving the constisency of it.

The eggs never puffed up. Is it really only two eggs? I have not used a mix of sweet potatoes, apples and coconut milk before. It will definitely be something different to try out for breakfast. I like the inclusion of the spices and fruit and nuts which gives the bake some added flavors and textures.
Am doing Whole30 and needed to find something new for breakfast. It is absolutely delicious! Reminds me of sweet potato casserole at Thanksgiving. In fact, I just might sub this next year. Definitely a recipe that will become a staple in our house! AND you now have me cooking with coconut milk — as a non-coconut lover except in shampoo!
This was so delicious! I made it pretty much as written and had it for breakfast for several days. Totally satisfied my cravings for carbs in the morning and was very satisfying. Was not hungry till lunch. I plan to make it again today but will add nuts and raisins into the mix before baking as I think I would prefer them incorporated into it rather than sitting on top. Really yummy and I so appreciate your sharing your recipes.
This became a staple during my Whole30 last month. I used leftover baked sweet potato instead of grating it, and I added it to the other ingredients with sauteed diced apples. I also had to bake it in ramekins because I did not have a cast iron skillet available. It is now my go-to breakfast for Saturday mornings making it my weekend splurge.
Hi,I just made this in a 9 inch baking pan. Smaller would probably be better it was very thin. It also took about 20 minutes? The eggs were firm but not browning so I took them out around 22 minutes. Should I have left it in longer? It looks like you might have sprinkled something on yours. I do think making it in the skillet cuts down the baking time since the skillet is already hot. Maybe it could be frozen before baking? First of all, this was amazing! My 5 year old thought it was dessert it was so good.
But I was wondering if Adding a little almond flour might make it more like a cake consistency? This is a delicious recipe. I get tired of eggs. I know what you mean!

And I love the idea to keep them chilled in the fridge. I substitute 3 flax eggs when I double the batch to make them vegan and they make the perfect, delicious snack! And I can see how I can vary this some and keep him interested.
I made them with avocado instead and I have to say, I love them, too. It really is good. Just reviewed this recipe for my blog today! I LOVED it — I have a hard time finding easy, pre-workout snacks that provide a good energy boost without being overly filling, but these little muffins worked perfectly.
So I think this recipe is amazing!!! How long should I bake them in a regular muffin pan? I made these tonight, and they are so yummy! I doubled the recipe and only had one mini muffin tin, so I made the rest in a small pan and cut into squares! So easy and yummy! It should work on the computer or a tablet. I love how these use banana as the natural sweetener.
My 20 month old loves them with raisins and my very picky 4 year old loves them plain. I make for myself with dark chocolate chips and this has become our family fall favorite snack!
Made last night — These are good, with a few disclaimers: I think a slightly over-ripened banana will give it just the right amount of sweetness. I also used chopped pecans instead of chocolate chips and I used 1 tsp of vanilla instead of adding cinnamon.
They are very healthy and ultra clean — just sweet potato, banana, peanut butter, 2 eggs, nuts and vanilla. They are great with coffee for a quick breakfast. I used chunky PB too bc its all I had and I loved the nutty bites. Thanks for sharing this recipe. I use almond butter and through in some chia seeds and dark chocolate chips. I just made these and they turned out great! I left out the chocolate chips but added vanilla and dried cranberries.
Having toyed with paleo baking for a while, I was skeptical on these, but this recipe is truly perfection! Thank you so much for such a great little treat! Do they have to go to the fridge as soon as they cool down? How long can they be kept in the fridge for?
Can they be frozen? I put mine in the fridge after i made them and let them cool. They last about a week. This is by far my favorite recipe so far! What ate the two ingredients and amounts added to make your healthy brownie bites? Just wondered if the banana sweet potato bites are in a regular sized muffin tin or a mini. Do uou think these will taste ok with flax eggs instead of regular eggs? Can I make them in regular size muffin pan? I think the eggs are a crucial part of the texture…but it would definitely be worth a try.
These are so good! I made regular sized muffins, just cooked them longer. I eat them with most meals and for breakfast. I am sure this is a question that has already been answered, but do I use natural peanut butter or does it need to be the thicker kind to make sure it sets right?

What an amazing recipe!! I am going to make it for sure! I always try to minimize the amount of sugar in the everyday treats that I make and my sweetener of choice is definitely maple syrup! Thank you so much for sharing it with us!!!! It wrecks my stomach…. These may be a little more crumbly, maybe a teaspoons of flaxmeal would help. Do you have an opinion on grapeseed oil? I do use grapeseed oil in muffins. Here is a recipe I use frequently for our family. This will give you an idea of proportions.

I absolutely LOVE recipes that I can make over and over, but change it up a bit so it never gets boring! I have friends kids who are GF and these muffins would be perfect for playdates. Healthy treats are our favourite!
